Very vegiliscious!

Very nice weekend. I was 300-500 calories over my target – not bad! And exercise was right on.

This week I made a concerted effort to include more unprocessed foods, in particular vegetables. Here’s what this week’s food looks like:

B: vegetable soup with deer
S: “pancakes”, made with oats, cottage cheese, and egg whites (these are yummy!)
L: “naked” salad with tuna, avocado, herbs, and lime juice
S: cottage cheese and berries
S: carrot muffins before martial arts, a glass of chocolate milk after
D: varied, but lean meat & veggies – foregoing potatoes, rice, bread, etc.

The muffins are made with a mix of whole wheat flour and oats. They are a recipe from my “Eating for Life” cookbook. A little dry, but I needed something light to eat before martial arts. They have protein powder in them, so I’m getting some protein in.
